Ratio Calculator for Cake Recipes

Inspired by The Cake Bible by Rose Levy Beranbaum, this calculator is meant to help you calculate the ratio of ingredients in your cake recipe so you can make adjustments where necessary!

Please input your ingredients by mass (grams). This calculator is built on the following generalizations*:

Cocoa powder consists of 23% fat

Butter consists of 82% fat, 16% liquid and the remaining as milk solids

Sour cream consists of 21% fat, 71% liquid and the remaining as milk solids.

Buttermilk consists of 2% fat, 90% liquid and the remaining as milk solids

Flour refers to wheat flour. The protein content of the flour used does not matter.

*Percentages are based on average figures I got off the internet. Depending on where you buy your ingredients from, some of these percentages may vary!

Simple conversions for dry measures

1 teaspoon = 5g

1 tablespoon = 15g

3 teaspoons = 1 tablespoon

16 tablespoons = 1 cup

1 cup = 240ml
